Making panellets!

ALL SAINTS FOOD
Ingredients:

Zest of one lemon.
One egg.
250gr of sugar.
150gr of potatoes.
250gr  ground almonds.

To decorate: pine nuts, chopped almonds, grated coconut..

Steps to follow:

- Boil the potatoes in salted hot water for ten/ fifteen minutes.
- Peel the potatoes and mash them.
- Mix potatoes, sugar, zest of lemon, and ground almonds and mash it all.
- Wrap the mixture in clingfilm ( film paper)
- Leave the mixture in the fridge for one or two days.

When the mixture is ready:

-Separate  the white from the yolk ( the two parts of the egg)
- Make small balls  with the mixture.
- Coat the balls with the white.
- Cover the small balls with pine nuts, chopped almonds or grated coconuts.
- Coat the balls with the egg yolk.
- Put the panellets in the oven at 180º for 8-10 minutes.
